Favorite Recipes: Radish and Tart Apple Salad

When you get a call (on a phone with a helical spring) from the highly sought after artist and tastemaker, Katherine Sandoz, saying she “loves your blog and wants to be a part of it” –you don’t hesitate to scream YES!!

Katherine creates beauty each week for Salted and Styled with her food-inspired art. Typically, she delves deep into the historical side of the food and always surfaces with a gem as the foundation of her pieces. What we love about her contribution is not only the beauty of the piece itself, but the thought it provokes. 

When asked her favorite recipes to date on Salted and Styled the Radish and Tart Apple Salad was at the top of her list. Funny, because the painting on panel she did for that post is one of our favorites.

Radish and Tart Apple Salad

Ingredients:
3 cups matchstick sliced radishes (approximately 12 radishes)
1 cup matchstick sliced green apples (approximately 2 small apples)
2 tablespoons freshly squeezed grapefruit juice, divided
1 teaspoon grapefruit zest
1 tablespoon vegetable oil
1 tablespoon honey
1/2 teaspoon minced fresh ginger
1 teaspoon finely chopped fresh mint
Kosher salt and freshly ground pepper

Directions:
In a medium mixing bowl, toss the matchstick sliced radishes and apples with 1 teaspoon of the grapefruit juice and set aside.

In a small mixing bowl, whisk together the remaining grapefruit juice, grapefruit zest, vegetable oil, honey and fresh ginger. Stir in mint. Add salt and pepper to taste. Pour over radish and apple mixture and toss to coat. Serve immediately.
SERVES: 4
