Adult Cherry Coke Float

A coming of age drinkable dessert.

Adult Cherry Coke Float
makes 4 

Ingredients:
1 (12 ounce) package of frozen pitted sweet cherries
2 cups Goslings Black Seal rum
1 quart vanilla bean ice cream, slightly softened
4 (6 ounce) bottles Coca-Cola  (don’t even use anything else), ice cold
4 tablespoons Cherry Verenya Syrup (recipe HERE), can substitute cherry juice

Directions: One day ahead, prepare the drunken cherries by placing the cherries and rum in a large jar with a screw top lid. Shake to coat the cherries. Place in the refrigerator overnight. 

Drain the cherries, reserving liquid, and stir into the ice cream. Pat the ice cream into a shallow dish and freeze until hardened.

To Assemble the Drinks:

Add one shot (1 1/2 ounces) to each of four tall glasses. Stir in 1 tablespoon of cherry syrup into each glass. Add two small scoops of the drunken cherry ice cream to each glass and pour some of the contents of each bottle of Coke over. Serve the remaining Coke on the side of each drink.
*Great as a fun dessert at your next dinner party…no children allowed.

The King’s Belly Sandwich

When I was younger, I was obsessed with Elvis Presley. Okay, I still am. But back then my imagination was so ripe, I could picture myself on the the brightly decorated sets of his formulaic movies, befriending costars like Shelly Fabres. Shelly would ask “Libbie Marie (I would, of course, change my name) what did you and “E” do last night” and I would fill her in on all the exotic fun a sheltered ten year old could dream up for a date with the king.

Pork Belly Gyros

For a stretch of four years, I was lucky enough to be a resident on the Greek island of Mykonos for a couple of months each year. I’d go to recharge my creative batteries, drink some ouzo, dive for sea urchin roe, and sleep. Standing on the edge of the cerulean blue Aegean Sea and overlooking the tan bodies of Grecian Gods in Speedos, I knew I was exactly where I needed to be. Of course, as nourishing as all that introspection was for my soul, this girl needed to eat. And that’s when I discovered a Mykonian gyro. I’d had gyros before. I bought one off a food cart in New York, ate a gut bomb from the county fair, and worse yet, ordered a gyro from some Midwestern chain where my server referred to it as a “gee-RO.” Anywhere you live, someone’s making some trashy gyro, but I’m here to tell you that there ain’t no gyro like a gyro in Greece.
